Tiramisu Overnight Oats

An Italian dessert, made into breakfast.

We’ve taken the flavours of a classic tiramisu and turned it into something a little healthier for breakfast. It’s creamy oats soaked in yoghurt and coffee, and topped with a sprinkling of cocoa powder for an Italian-inspired way to start the day.

Ingredients

For the oats:

  • 3 tsp instant coffee
    decaf if desired*

  • 300ml boiling water

  • 80ml oat milk
    or almond milk or more water

  • 3 tsp maple syrup
    or honey

  • 1.5 cups (or 150g) jumbo oats

  • 1 scoop of vanilla plant protein
    or tiramisu flavour**, optional

  • 3 tbsp chia seeds

  • 3 heaped tbsp plain Greek yoghurt

  • 1 tsp vanilla extract

To top:

  • 300g plain Greek yoghurt**

  • 1 heaped tsp cocoa powder

*Alternatively, you can use 300ml of filter coffee, again decaf if desired, or 3 shots of fresh coffee (made up to 300ml of liquid by adding additional hot water)

**Add 125ml extra milk or water if using a pea protein

Method

Mix together the instant coffee and hot water in a jug or mug. 

Add the milk, maple syrup or honey, oats, chia seeds, 3 tbsp of Greek yoghurt, vanilla extract, and coffee to a large bowl or glass container. Mix well to combine.

Divide this mixture between three glass jars, and place them into the fridge overnight.

In the morning, top the overnight oats with 100g of Greek yoghurt each. Smooth over the surface with the back of a spoon.

Dust the top with cocoa powder using a mini sieve and enjoy!

Store these in the fridge for up to three days.
