Pear and Ginger Bircher Muesli
A fresh, fruity, nourishing, and delicious breakfast.
Whether you call this Bircher Muesli or Overnight Oats, this make-ahead breakfast is perfect for weekday mornings. You know the drill? The oats are soaked in a mixture of milk and yoghurt overnight, along with some warming spices and grated pear (for natural sweetness). In the morning, simply add your seed and nut butter topping and tuck in!
Ingredients
For the cod
200g jumbo oats
1 tsp cinnamon
1 tsp ground ginger
250g plain natural
or greek yoghurt250ml unsweetened almond milk
or milk of choice2 - 3 tbsp maple syrup
or honey2 tbsp each of sunflower and pumpkin seeds
1 large pear
grated
For the topping
1/2 pear
slicedPumpkin seeds
Sunflower seeds
Hemp seeds
Almond butter
or other nut butterA little extra maple syrup
optional
Method
Mix together the oats, cinnamon, ginger, yoghurt, milk, maple syrup, pear, and seeds in a large glass dish with a lid. Place into the fridge overnight.
When you’re ready to eat, top with more pear, seeds, nut or seed butter and maple syrup before serving.
You can store this in the fridge for up to four days in one large or individual containers for an easy grab-and-go breakfast.
