Black Bean Burrito

It’s meals like this that make us very happy.

Inspired by the flavours of Tex Mex food, it’s got everything you’d want from a balanced meal. Think hearty black beans, fresh tomato salsa, charred corn, creamy guacamole, and crunchy lettuce all rolled up in a tortilla wrap which somehow makes eating it so much more enjoyable, just us? Whether you’re team taco, team burrito, or team quesadilla - you’re going to love this one! We don’t know how authentic it is, but for a quick, nourishing, and delicious lunch or dinner it certainly fits the bill.

Ingredients

  • 1 tbsp of extra virgin olive oil

  • ½ white onion
    diced

  • 2 garlic cloves
    crushed

  • 1 red pepper
    finely diced

  • 1 can of black beans
    drained and rinsed

  • 125g sweetcorn

  • ½ tsp of ground cumin

  • ½ tsp of smoked paprika

  • ¼ tsp of chilli powder

  • 2 large tortilla wraps

  • 1 large handful of lettuce
    shredded

  • 1 avocado
    mashed

  • 2 tbsp of salsa

  • 2 tbsp of grated cheese

Method

Begin by heating the oil in a pan on medium heat. Add the onion and cook for a few minutes before adding the garlic, red pepper and black beans.

Next, add the ground cumin, smoked paprika and chilli powder. Combine and cook for 5 minutes before adding the sweetcorn.

To assemble, place the wraps on a sheet of tin foil. Add the shredded lettuce to the middle, followed by the black bean mix. Add some mashed avocado, salsa and then grated cheese.

Carefully fold one side over, followed by the two opposite ends together. Gently roll over, ensuring the filling is tucked in.

Wrap in the foil and when ready to eat, cut in half with a sharp knife. Enjoy!
