Pea Hummus Open Sandwich

with radish and feta

Forget avocado on toast, how about trying pea hummus on toast? We blitz the peas with shop-bought hummus and top them with salty feta and crunchy radishes for a delicious lunchtime upgrade!

Make a big batch and enjoy it on repeat.

Ingredients

  • 250g hummus

  • 140g fresh or frozen peas

  • Juice from 1/2 lemon

  • 8 radishes, sliced

  • 120g feta cheese
    dairy or dairy-free

  • 4 slices of wholemeal bread

  • Handful of mint leaves

Method

  1. Begin by heating a pan of water on a medium heat and add the peas. Cook for a few minutes and then drain.

  2. Add them to a blender along with the hummus and lemon juice and blend until the hummus turns a vibrant green colour.

  3. Lightly toast the bread and then load the hummus on top.

  4. Season with pepper, add the crumbled feta and sliced radishes. Top with some fresh mint leaves and enjoy!
